Mother’s Day doesn’t always have to be about a big celebration - often, it’s the smallest but most sincere gestures that count - and here are some suggestions at planning a perfect Mother’s Day, from morning till night.
Firstly, you might want to wake up a little earlier to whip up a tasty breakfast for your Mom, giving her the luxury of sleeping in a while longer. We suggest easy-to-prepare favorites like pancakes, oatmeal and fruits - or if you’re feeling ambitious, maybe a full breakfast that includes eggs done her favorite way, grilled sausages, mushrooms and toast! With such a hearty and delicious start to the day, the next thing you can consider doing is saying – “I’ll do the chores, Mom!”
For most mothers, that phrase is music to their ears. Taking over simple chores like vacuuming the floors and sofas, washing the dishes, making the beds and doing a batch of laundry frees up your mother’s time so she can relax in the morning and afternoon. May we suggest buying one or two of her favorite books or magazines so she can take a break while you get the house spick and span? If you’re thinking of planning a more elaborate pampering treat for your Mom, you might want to book a spa session or a manicure for her while you efficiently clean your way through your house - coming home to a sparkling clean home is always a joy.
If you have an hour or two to spare before your Mom comes home from her enjoyable afternoon off, you could prepare an easy but scrumptious dessert she can have for tea. Better yet, if she is already home, the two of you or your family can spend quality time preparing a no-bake cheesecake pot together. While this recipe might sound decadent, it is actually relatively healthy - a small slice with a cup of tea makes the perfect treat - you can’t say no to cake!
No-bake Blueberry Cheesecake Pots (Serves 6)
Ingredients
125g blueberries
2 tablespoons brown sugar
Blueberry Sauce:
Heat about 1/3 of the blueberries and sugar in a small pan over medium to low heat for 2 to 3 minutes, or until the berries have broken down.
Add the rest of the blueberries, cook for another 1 minute.
Remove from heat and set aside to cool. Melt butter in a saucepan over low heat.
Ingredients
75g (about 5) digestive biscuits
25g unsalted butter
Crunchy Biscuit Base:
Crumb the digestive biscuits in a blender or food processor until they resemble breadcrumbs.
Mix the crumbs and the melted butter with a spoon until the crumbs are moistened.
With a spoon, lightly press down the biscuits mixture into the bottom of 6 dessert pudding bottles or shot glasses (180ml/3 oz size) and leave to chill in fridge.
Ingredients
250g cream cheese, cut into cubes
1 teaspoon vanilla extract
50g icing sugar
140g non fat plain natural yoghurt
Cheesecake Filling:
Place cream cheese, icing sugar and vanilla extract in the mixing bowl. Mix or blend until the mixture becomes smooth and creamy.
Add in yoghurt and continue to beat for about 1 minute till the mixture is thoroughly blended. Spoon cream cheese mixture into the prepared pudding bottles or shot glasses (about 3 tablespoons per glass).
Leave to chill in the fridge until ready to serve. Top with the blueberry sauce before serving.
